Chocolate Gingerbread Boy Cookies

  Me & my kids love Chocolate Gingerbread Boy Cookies, this cookies is very famous as a christmas cookies. Altough I didnt celebrate christmas, I do love to bake this cookies. After try many recipe, I finally found this perfect recipe for my Chocolate Gingerbread Boy Cookies. This is a different recipe from the basic gingerbread cookies, I do a little modification on the actual recipe, I add more chocolate for the topping. I do love chocolate so much! This cookies is a good combination of chocolate & gingerbread, taste very delicious, 1 is not enough *actually I can eat them all...alone* hahahaha

- 3 1/4 cups all-purpose flour, keep extra flour for dusting.
- 1/3 cup cocoa powder.
- 1 tablespoon ground ginger.
- 2 teaspoons ground cinnamon.
- 1 teaspoon ground cloves.
- 1 tablespoon baking soda.
- 1/2 teaspoon baking powder.
- 1 teaspoon salt.
- 5 tablespoons unsalted butter, softened.
- 1/3 cup solid vegetable shortening.
- 1/2 cup dark brown sugar.
- 1 large egg.
- 1/2 cup molasses.
- 2 ounces bittersweet chocolate, melted it first and cooled in room temperature.

-CHOCOLATE TOPPING-- 250 gram Milk Chocolate Compound, melted it first, cooled in room temperature, so the texture is like chocolate jam.
- 50 gram White Chocolate Compound, 
melted it first, cooled in room temperature.
- small chocolate candy, I use M&M Mini's.


1. In a medium bowl, whisk the flour with the cocoa powder, ground ginger, ground cinnamon, ground cloves, baking soda, baking powder and salt. In the bowl of a standing electric mixer fitted with the paddle, beat the softened butter with the shortening at medium speed until the mixture is smooth, about 30 seconds. Add the brown sugar and beat until fluffy, about 2 minutes.
2. Add the egg to the cookie batter and beat until incorporated. Beat in the molasses and then the melted bittersweet chocolate. Add the flour mixture in 3 batches, beating between additions. Divide the dough into 3 equal parts. Shape each part into a disk, then wrap each one in plastic wrap and refrigerate the cookie dough until chilled, about 2 hours.
3. Preheat the oven to 350°. Line 2 large baking sheets with parchment paper. On a lightly floured work surface, roll out 1 disk of dough 1/4 inch thick. Using Gingerbread Boy cookie cutters, cut the dough into shapes and transfer to the prepared baking sheets. Reroll the dough scraps and cut out more cookies.
4. Bake the cookies for about 7 minutes, rotating the pans halfway through baking until the tops are dry. Let the cookies cool on the pans for 5 minutes, then transfer to wire racks to cool completely. Repeat the process with the remaining dough.
5. After the cookies chilled, spread the melted chocolate compund on top of cookies. Decorate with M&M Mini's for the eye & button. Scrape the melted white chocolate into a piping bag fitted with a very small tip, create a smile mouth using it. Let stand until the chocolate dries, about 20-25 minutes.

 This Chocolate Gingerbread Boy Cookies can be kept in an airtight container for up to 1 week. But I guess this delicious cookies will run out within a fes days only, hahaha. Believe me, kids love this cookies so much!!!
